NEW HOST COUPLE AT MELSTED SEASIDE HOTEL
We are delighted to welcome Mathias Sejer Sørensen as the new hotel and head chef.
Together with his wife Andrea Aguirre Suarez, he will take over the operation and culinary direction of the seaside hotel.
Mathias brings solid experience from renowned hotels and restaurants, focusing on quality, hospitality, and gastronomic craftsmanship. His approach combines classic virtues with a modern, seasonal kitchen, showing great respect for ingredients and taste.
We are proud to attract such a dedicated and ambitious host couple to Melsted Seaside Hotel, and we have high expectations for the upcoming season and this new collaboration. Together, they will strengthen the seaside hotel's culinary profile and the overall guest experience. The goal is to create continuity, stability, and strong future development.

We are proud to be nominated once again for Denmark's Best Seaside Hotel in Opdag Danmark's annual poll – for the third consecutive year. In 2023, we achieved an impressive third place nationally, and in both 2024 and 2025, we secured first place in Zealand and the Islands. The Winter Island

The Sunshine Island
Summer is back, and the bathrobes are out again, with all our guests enjoying starting the day with a swim. It's also wonderful to consider that summer lasts longer here on Bornholm, both because the cliffs retain heat and because we have more hours of sunshine than the rest of the country. So, hopefully, we can look forward to another good month of summer.
The restaurant is beautiful regardless of the weather, where you are pampered all day long by our fantastic restaurateurs Troels and Daniel and their competent kitchen team. It's almost like being in a "sea cinema" to sit here and enjoy the view.

On the cover of Gastro
Summer is in full swing at Melsted Seaside Hotel, and the hotel is full of happy and expectant summer guests. According to Gastro magazine, the country's historic seaside hotels are back in great shape, which is why the editorial team also visited a seaside hotel for the magazine's annual summer issue. Gastro visits 4 of the country's best seaside hotels, including Melsted Seaside Hotel, which has been featured on the entire cover of the magazine.
A significant part of staying at a seaside hotel is the dining experience. We are so pleased that Troels Madsen and Daniel Kruse are now working their magic in the kitchen. Therefore, it is especially gratifying when it is recognized by Gastro, which followed Troels Madsen in the kitchen and appreciated our local connection, the importance of quality ingredients, and the honest, well-prepared food our restaurant offers for breakfast, lunch, and dinner.

Our Culinary Holiday Island
There is almost always something exciting happening here on our lovely holiday island. The Democracy Festival has concluded successfully in beautiful weather with many happy guests who have debated, networked, and enjoyed themselves.
This wonderful festival for democracy will be followed next weekend by Culinary Island – Bornholm Food Festival, featuring Denmark's largest cooking competition; Sol over Gudhjem – And we are both proud and grateful that participants and judges have chosen to stay at Melsted Seaside Hotel.

Spring at the seaside hotel
On April 30th, we opened our doors and, as per tradition, inaugurated the bathing season with Grand Bathing Day. We are very grateful to have seen so many familiar faces here, both at the opening and throughout the first month of the season. Our guests' desire to return is the greatest seal of approval we could ask for.

Denmark's 3rd best seaside hotel
Melsted Seaside Hotel was named Denmark's 3rd best seaside hotel in Discover Denmark's annual poll. We are very proud of this achievement after our first season on Bornholm. A big thank thank you to all of you who voted for us.
Troels, Daniel, and the rest of the team were also warmly welcomed during Easter and look forward to reopening for the next two weekends with a new seasonal menu and new à la carte dishes, leading up to the seaside hotel's grand opening on April 30th with Grand Bathing Day.

The restaurant opens for Easter
Along with much of Bornholm, we are opening the restaurant already for Easter! Troels, Daniel and co. are busy with preparations and look forward to opening their doors with a special Easter menu, a selected lunch menu, and delicious à la carte dishes. We will open for lunch and dinner service from Wednesday, April 5th, and remain open until and including Easter Sunday, April 9th, and the subsequent weekends until the seaside hotel opens as planned with Grand Bathing Day on April 30th.

New Restaurateur at Melsted Seaside Hotel
We are thrilled to announce that the two experienced chefs Daniel Kruse and Troels Madsen, known from Det Røde Pakhus, Molen, and formerly Christianshøjkroen, have taken over the responsibility for Restaurant Melsted Seaside Hotel. With this collaboration, we can confidently promise that the dining experience at Melsted Seaside Hotel will reach new heights, and we look forward to an exciting new season where we can collectively ensure our guests a truly exceptional overall experience here at Bornholm's prime location.
